What do you need to know?

Up until December 2022, different States and Territories were able to identify their own requirements for Food Safety Supervisors, Food Handler Training and Record Keeping.

This is where the FSANZ Standard 3.2.2A comes in!

Standard 3.2.2.A outlines three (3) additional requirements for all States and Territories in Australia that your food business may or may not already have in place:

one.

Food Safety Training for All Food Handlers.

Accredited OR non-accredited training is required for all Food Handlers via courses such as SITXFSA005 Use hygienic practices for food safety.

two.

Food Safety Supervisor Certificates for Appointed Food Safety Supervisors.

A Food Safety Supervisor must complete both SITXFSA005 Use hygienic practices for food safety and SITXFSA006 Participate in safe food handling practices (both must be accredited) OR SIRRFSA001 Handle food safely in a retail environment if preferred.

Record Keeping

Record keeping or other evidence that substantiates that the food business is properly managing the requirements outlined in Standard 3.2.2.

  • The new regulations will become enforceable in December 2023

  • Category 1: Food businesses must implement all three (3) of the requirements above

  • Category 2: Food businesses that offer retail sale of food must implement the first two (2) requirements above

  • Higher risk due to common handling of unpackaged potentially hazardous food. Category 1 businesses may include (Guide Only):

    • Restaurants and cafes

    • Mobile food vendors

    • Bakeries and takeaway shops

    • Caterers

    • Hospitals, childcare and aged care centres

  • Lower risk due to limited handling of unpackaged potentially hazardous food. Category 2 businesses may include (Guide Only):

    • Service station

    • Supermarket

    • Delicatessen

Other things to know:

  • The Food Safety Supervisor must be reasonably available/ contactable during business as usual, if not, an additional Food Safety Supervisor must also be appointed

  • The Food Safety Supervisor/s must update their qualification every 5 years

Food Safety & Hygiene

Training for Team Members

By the end of this training, participants will be able to:

  • Follow hygiene procedures and identify food hazards

  • Report personal health issues

  • Prevent food contamination

  • Prevent cross-contamination by washing hands

This course maps to SITXFSA005 Use hygienic practices for food safety.

  • Explore the laws, regulations and essential procedures that are there to ensure food is safely handled and prepared.

  • Gain awareness about personal hygiene requirements, including handwashing, proper attire, and the practices that keep you and food safe.

  • Discover tips for maintaining a clean and tidy operation, and the importance of pest control.

  • Discover the “Temperature Danger Zone!”. This includes the correct handling, storage and temperature controls for different food types. Here, you’ll also explore how to properly maintain equipment used for preparing and storing food.

  • Remove or minimise food hazards and food contamination. Know what to do when you or a customer is unwell and how to cater to customers with food allergies.

Training for Leaders  

By the end of this training, participants will be able to:

  • Follow a food safety program

  • Store food safely

  • Prepare food safely

  • Provide safe single use items

  • Maintain a clean environment

This course maps to SITXFSA006 Participate in safe food handling practices and SIRRFSA001 Handle food safely in a retail environment.

  • Correctly receive deliveries, store and transport food, and discover the equipment required for safe storage of food and ingredients.

  • Learn about the pivotal role that a Food Safety Supervisor plays in ensuring safe food handling, as well as the requirements for training, informing and leading others to maintain the highest standards.

  • Explore the systems and control points in the food preparation process that will help to eliminate hazards or reduce risk associated with knives, machinery, perishable foods, bacteria, human error, time pressures, etc.

  • Discover techniques for safe food monitoring including the steps from food preparation, through to packaging and storage.

  • Explore the safest ways to store, handle, and prepare various types of food.
